Chicken and Rice

Casserole


2 Cups Cooked Rice
2 Cups (8oz) Shredded Monterrey Jack Cheese
2 Cups Cooked Chicken Breast (chopped)
1/2 cup Finely chopped Red Onion
1 Can Evaporated Milk (12 Fl. Oz.)
2 Large Eggs slightly beaten

1/4 Cup Fresh Cilantro (chopped)

2 Tbsp. melted butter

1 Tbsp. diced Jalapenos

Preheat oven to 350 degrees. Grease 2 Qt. casserole dish. Combine all ingredients in order given in large bowl. Mix well. Put all ingredients in casserole dish and bake 45-50 mins. or until knife inserted comes out clean. 4-6 servings.
