Bite-Size Cheesecakes
2-8oz. pckgs. soft Creme Cheese 1 Tbs. Vanilla Extract 2 Large Eggs 1/2 Cup granulated Sugar 12 Vanilla Wafer Cookies Your choice: cherry, blueberry, etc. pie filling for topping | |
Preheat oven to 350 degrees. Fill a cupcake pan with foil or paper cupcake liners. Blend the Crème Cheese, Sugar, Eggs, and Vanilla together with an electric mixer until smooth. Place one Vanilla Wafer in each cupcake liner to form Cheesecake crust. Spoon Cheesecake batter into each cupcake, leaving room for the cupcake to rise while baking. Place pan in oven and bake about 25 mins. or until tops of cheesecake is lightly golden. Remove pan from oven and let them cool. Top each cheesecake with topping of your choice and chill till served. |
