Cajun Squash
1 large onion (sliced) 2 cloves garlic (minced) 3 tablespoon olive oil 2 medium Zucchini (sliced) 4 medium yellow squash (sliced) 4 tomatoes (chopped) 1/4 to 1/2 teaspoon salt 1/4 teaspoon dried Oregano 1/4 teaspoon dried whole Thyme 1/2 teaspoon hot sauce 1/4 teaspoon pepper | |
Sauté onion and garlic in oil in a large skillet until onion is crisp-tender. All Zucchini and yellow squash. cook over medium to high heat, stirring constantly, 5 minutes. All remaining ingredients. Cook stirring constantly 2 more minutes. Serve immediately. Yield: 8-10 servings |
