Slow Cooker Fiesta

Ranch Cream Cheese

Chicken


2 tbsp Water
2 lb Chicken Breasts (not frozen)
1 tbsp Olive Oil
1-1/2 tsp Ground Cumin
1 tsp Ancho Chili Powder
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Salt
1/2 tsp Dried Oregano
1/2 tsp Smoked Paprika
1 oz pkg Dry Ranch Seasoning Mix
8 oz Cream Cheese, softened, cubed
Lightly grease slow cooker or use a crockpot liner. Add water. In small bowl, mix olive oil and all seasoning but Ranch mix. Rub seasonings and oil all over chicken and then place in slow cooker. Pour in any remaining seasonings. Cook on high 2-4 hours or on low for 6-8 hours, or until chicken is fork tender. Remove chicken and let cool, then shred chicken. Drain any remaining liquid in slow cooker, then add chicken back in. Top with Ranch seasoning mix and cubed cream cheese. Cook on high 20 minutes. Stir together and serve. Use as a dip or filling for tacos, taquitos, burritos, etc.
