Hot Corn Dip


About 3 c Corn Kernels (2 cans drained)
1 small can Green Chilies
1/4 c Diced Sweet Onion
1/2 tsp Garlic Powder
4 oz Softened Cream Cheese
1/2 c Sour Cream or Greek Yogurt
1/2 c Shredded Pepper Jack Cheese
3/4 c Shredded Monterrey Jack Cheese
Preheat oven to 350 degrees. In mixing bowl, stir together sour cream, cream cheese, spices, and shredded cheese (reserve about 1/4 c cheese for topping). Gently add corn kernels, green chilies, and onions. Spread mix into 2 quart baking dish. Top with reserved cheese. Bake about 25 min or until heated through and cheese is bubbly. Remove from oven and serve with tortilla chips or Fritos.
