Arizona Sunshine Lemon

Pie


1 large Lemon
4 large Eggs
1/2 c Butter, melted
1 tsp Vanilla
1-1/2 c Sugar
9" frozen deep dish pie crust, unbaked
Take pie crust out of freezer. Place crust in a glass pie plate and preheat oven to 350 degrees. Wash your lemon and cut up and remove all seeds. Place lemon with peels into a powerful blender. Add eggs, butter, vanilla, and sugar. Blend until smooth. Pour mix into your pie crust. Bake about 40 min or until set. Let cool then chill in fridge. Slice and serve with Cool Whip. Enjoy either warm, room temperature, or chilled.
