Fresh Lemon Bundt Cake


1 c Butter, softened
2 c White Sugar
5 Large Eggs
2 c All-Purpose Flour
1/4 c Fresh Lemon Juice
1 Large Lemon, zested
Preheat oven to 325 degrees. Grease and flour a fluted tube pan, such as a bundt pan. Beat butter and sugar with an electric mixer in a large bowl until light and fluffy. The mix should be noticeably lighter in color. Add eggs, one at a time, alternating with flour, allowing each egg and portion of flour to blend into butter mix before adding the next. Stir lemon juice and zest into flour mix until batter is just combined. Pour into prepared pan. Bake in preheated oven until toothpick inserted into center comes out clean, about 45-55 min.
