Apple Puff Pancake


6 Eggs
1-1/2 c Milk
1 tsp Vanilla
1 c All-Purpose Flour
3 tbsp Sugar
1/2 tsp Salt
1/4 tsp Cinnamon
2 tbsp Butter
2 Apples - peeled, cored, sliced
3 tbsp Brown Sugar
Preheat oven to 425 degrees. In large bowl, use electric mixer to blend eggs, milk, and vanilla. Add flour, sugar, salt, and cinnamon. Mix until well blended. Set aside. Melt butter in a 9x9 square pan. Arrange apple slices in bottom of pan and pour batter over top. Sprinkle brown sugar over batter. Bake 30 min in preheated oven or until puffed and lightly brown.
