Farmer's Casserole


3 c Frozen Hash Brown Potatoes
3/4 c Shredded Pepper Jack Cheese
1 c Cooked Ham, diced
1/4 c Chopped Green Onions
4 Eggs, beaten
12 oz can Evaporated Milk
1/4 tsp Black Pepper
1/8 tsp Salt
4 oz can Green Chilies, chopped
Preheat oven to 350 degrees. Grease a 2 quart baking dish. Arrange hash brown potatoes evenly in bottom of prepared dish. Sprinkle with cheese, ham, and green onions. In medium bowl, mix eggs, evaporated milk, green chilies, pepper, and salt. Pour egg mix over potato mix. Cover and refrigerate several hours or overnight. Bake 40-45 min (or 55-60 if made ahead and chilled) in preheated oven, or until a knife inserted in center comes out clean. Let stand 5 min before serving.
