Carrot Cake/Cream

Cheese Icing


2 Cus White Granulated Sugar
4 Eggs
1 Cup Vegetable Oil
1 Teaspoon Vanilla
2 Cups Flour
2 Teaspoons Baking Soda
2 Teaspoons Cinnamon
3 Cups Finely Grated Carrots
3/4 Cup Chopped Walnuts
Dash of Nutmeg

Cream Cheese Icing:
1/2 Cup Butter or Margarine
1 (8oz) Pkg Cream Cheese
2 Teaspoons Vanilla
1 Box (1 lb) Powdered Sugar
Cream Sugar and Eggs. Stir in Oil and Vanilla. Add dry ingredients and mix well. Add grated Carrots and Walnuts mixing all ingredients together. Bake @ 350 degrees



Cream Cheese Icing:

Cream Butter and Cream Cheese, add sugar and vanilla. Ice cooled cake. When measuring carrots, do not pack down tight.for 1 hour and 10 minutes.
