Mini Sausage Pancake


1 lb Ground Sausage
1 c Flour
1 tsp Baking Powder
1/2 tsp Baking Soda
1 tbsp Sugar
1 Egg
1 c Milk
1 tbsp melted Butter
Preheat oven to 400 degrees. Cook sausage. Crumble with spatula until fully cooked. Drain fat and set aside. Sift together flour, baking powder, baking soda, and sugar. In separate bowl, beat egg, then add milk and melted butter. Mix together wet and dry ingredients. Pour pancake mix into mini muffin pan and then add 1 spoonful of sausage on top. Bake 10-12 min. Remove from oven and let cool. Serve with Maple Syrup.
