Zippy Egg Casserole

1 lb Pork Sausage
5.5 oz Seasoned Croutons
1-1/2 c Shredded Cheddar Cheese
1 c Shredded Swiss Cheese
1 c Shredded Pepper Jack Cheese
8 Eggs
1 pint Half & Half Cream
1-1/2 c Milk
1-1/2 tsp Dry Mustard
1 tbsp Minced Onion
Salt & Pepper to taste
Optional: 4 oz Diced Green Chilis and pickled, chopped Jalapeno Peppers
Place sausage in large, deep skillet. Cook over med-high heat until evenly brown. Drain, crumble, and set aside. In lightly greased 9x13 baking dish, arrange croutons in a single layer. Layer with cheddar, swiss, and pepper jack cheeses. Top with cooked sausage. Add optional peppers. In large bowl, beat together eggs, half & half, milk, mustard, onion, salt, and pepper. Pour into dish over sausage. Cover and refrigerate overnight. You could also top with additional cheese prior to refrigeration. The next morning, bake in preheated oven at 350 degrees for 45-60 min. Let sit for 20 min before serving.
