Taco Beef Nuggets With

Tejano Dipping Sauce

1 pound of extra lean ground beef
1 tbs of taco seasoning
1 can of chopped green chilies, drained
16 cubes of Colby jack cheese about 1/2 inch in size
1 egg white
1 tbs water
2 cups of crushed nacho cheese flavored tortilla chips

6 Tbs. thick taco sauce
3 Tbs. Honey
Pre-heat oven to 400F. Combine beef, taco seasoning, and green chilies in a large bowl mixing lightly but thoroughly. Divide the beef mixture into 16 round shaped portions around a cube of the cheese. Beat egg white with water until blended. Place chips in separate bowl, dip each meat ball into egg white mixture then into chips to coat completely. Press each meatball into a semi flattened nugget shape. Spray large baking sheet with PAM. Place nuggets on baking pan and spray the top of the nuggets generously with PAM. Bake in a 400 degree oven for 15-20 minutes. Meanwhile combine sauce and honey in small bowl and heat in microwave for 30 seconds or until warm. Serve with nuggets.
