Summer Skillet Gnocchi

with Burst Tomato


1 lb Italian Sausage
3 pints Cherry Tomatoes
3 tbsp Olive Oil
2-3 plump Garlic Cloves, chopped
Salt and Pepper, to taste
1/2 c Fresh Basil, plus more for garnish
pinch of Red Pepper Flakes
1 lb Gnocchi, cooked per directions
1 c Mozzarella Pearls
In a 12-inch cast iron skillet, brown Italian sausage and then remove. Add olive oil and set to medium heat. Add garlic and cook until softened. Then add cherry tomatoes in a single layer. Season with salt and pepper. Cook 5-7 minutes, tossing occasionally, until tomatoes begin to lose shape and burst. Stir in basil and red pepper flakes. Add gnocchi and sausage to pan. Cook until all heated through. Add mozzarella pearls and heat until just melted. Garnish with fresh basil.
