Italian Sausage and

Orzo Soup

1 lb Italian Sausage
1 c Orzo pasta
1 tbsp Olive Oil
1/2 Onion, chopped
1 tbsp Minced Garlic
28 oz Fire Roasted Diced Tomatoes
1 tsp Oregano
2 tsp Basil
1 tsp Red Chili Flake
4 c Chicken Broth
2 c Spinach, tightly packed
1/4 c Half and Half
1 c Parmesan Cheese
Heat oil in heavy bottom pot. Once warm, add chopped onion and garlic. Saute until onion is softened and raw garlic smell is gone. Add sausage and brown 5-6 minutes. Deglaze pot by adding stock. Scrape bottom of pot to remove any brown bits. Stir in tomatoes. Once stock comes to boil, stir in orzo, oregano, basil, red chili flake, salt, and pepper. Cover and cook 10-12 minutes on medium-low heat until orzo is almost cooked. Stir in spinach and cook 2 minutes. Switch off heat. Stir in half and half and parmesan cheese. Serve.
