Broccoli Cheddar


1 Russet Potato, peeled and baked
1 c Broccoli Florets
1/2 c Cheddar Cheese, shredded
3 tbsp Panko or Bread Crumbs
1/2 tsp Kosher Salt
1 Large Egg
1/8 tsp Garlic Powder
1/8 tsp Onion Powder
1/2 c Panko or Bread Crumbs
1 tbsp Vegetable or Canola Oil
Place potato cubes in a steamer pot over boiling water and cook 8 minutes. Add broccoli to steamer pot and steam vegetables another 2 minutes, or until fork tender. Remove everything from pot and allow to cool. Mash potatoes in large bowl and chop broccoli into bite size pieces. Add broccoli, cheese, panko, salt, egg, garlic and onion powder to bowl and combine. Place remaining panko in separate bowl. Using ice cream scoop or 2 tablespoon measure, roll mix into balls, coat in panko, and shape into small patty. Heat 1 tablespoon of oil in skillet over medium heat, place patties in skillet and press down with spatula to flatten. Pan fry for 3-4 minutes or until golden brown.
