Fiesta Corn Chip Salad

30.5 oz Whole Kernel Corn, drained
2 c Shredded Mexican Cheese blend
1 medium Sweet Red Pepper, chopped
1 c Mayonnaise
1/8 tsp Salt
1/8 tsp Pepper
9.25 oz Chili Cheese Flavored Corn Chips, crushed
Minced Fresh Cilantro (optional)
In a large bowl, combine corn cheese, red pepper, mayo, salt and pepper. Chill until serving. Just before serving, stir in corn chips. If desired, sprinkle with cilantro.
