Fluffy, Moist Pancakes

3/4 c Milk
2 tbsp Vinegar
1 c All Purpose Flour
2 tbsp Sugar
1 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1 Egg
2 tbsp Melted Butter
1 tsp Vanilla
Combine milk and vinegar in a small bowl for 10 minutes to sour. This is important, you want soured milk, not sour milk. You will not taste the vinegar in the final product. Set aside. Combine dry ingredients in a smaller bowl. In a bowl, whisk soured milk, eggs, vanilla, and melted butter together. Pour into dry ingredients and whisk until most of lumps are gone, do not over beat. Batter will be thick. Let sit for 10 minutes. You will start to see bubbles in batter, but do not stir again. Gently dip out 1/2 cup of batter and place on a buttered grill or frying pan. Cook until bubbles appear on surface of pancake and then flip with spatula to brown other side.
