Cheesecake Bars

1 pkg Peanut Butter Cookie Mix
1/4 c Butter, melted
1 c Chopped Salted Peanuts
16 oz Cream Cheese, softened
1 c Sugar
2 Large Eggs, beaten
1 tsp Vanilla

4 oz Semisweet Chocolate, chopped
1/2 c Heavy Whipping Cream
Preheat oven to 350 degrees. In a large bowl, combine cookie mix and butter; stir in peanuts. Press into bottom of greased 13x9 baking pan. Bake until edges are lightly browned, 10-12 minutes. Meanwhile, in a large bowl, beat cream cheese and sugar until smooth. Add eggs and vanilla; beat on low speed just until combined. Pour over crust. Bake until center is almost set, 15-20 minutes. Cool on a wire rack for 1 hour. Refrigerate at least 2 hours. Place chocolate in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; whisk until smooth. Cool, stirring occasionally, to room temperature or until ganache reaches a spreading consistency, about 40 minutes. Spread over top of bars. Refrigerate until firm. Cut into bars. Refrigerate leftovers.
