Glorious Sponge Cake




6 Eggs
1 c White Sugar
1/4 c Water
1 tsp Lemon Extract
1 tsp Lemon Zest
1 c Cake Flour
1/2 tsp Cream of Tartar
1/4 tsp Salt

Separate the eggs. In large mixing bowl, beat egg yolks until very thick and lemon colored. Beat in sugar gradually. Add water, lemon extract and lemon rind. Beat in flour. In another mixing bowl, beat egg whites until frothy. Then add cream of tartar and salt. Beat mix until egg whites are stiff, but not until they are dry. Fold this whipped mix into yolk mix. Pour batter into ungreased 9" tube pan. Bake at 325 degrees for 1 hour or until done.
