Easy Spinach-Parmesan Pie




1 Tbs. Butter
4 Medium Green Onions, sliced
2 Cloves minced Garlic
3 Eggs
1 Cup Milk
1/2 Cup small curd Cottage Cheese
1 Pkg. Frozen chopped spinach, 10 oz., thawed and drained
1/2 Cup Bisquick Mix
1 Tsp. Lemon Juice
1/4 Tsp. Black Pepper
3 Tbs. grated Parmesan Cheese
1/4 Tsp. Ground Nutmeg

Pre-heat oven to 350 degrees. Grease 9" pie plate. Melt butter in a large skillet over medium heat. Cook onions and garlic in butter for 2-3 minutes. Stir in Spinach. Spread mixture in pie plate. Spread the cottage cheese over mixture. Stir Bisquick, milk, lemon juice, pepper and eggs until blended. Pour into pie plate. Sprinkle parmesan cheese and nutmeg on top. Bake about 35 minutes or until knife inserted comes out clean. Cool 5 minutes and sprinkle with additional parmesan cheese when serving.
