Fruity Yogurt Salad (Low-Fat)




2 Tbs. shredded Coconut, toasted

2 Peaches, peeled and diced

2 Pears, peeled and diced

1 cup Pineapple, diced

2 Bananas, diced

2 Tsp. Mint Leaves, minced (optional)
1 Tbs. Lemon Zest
1 Tsp. Vanilla Extract
1 cup Peach Yogurt
2 Tbs. Honey
2 Tbs. Walnuts, finely chopped

Toss fruit together and fold in Yogurt, honey and walnuts. Transfer mixture to serving bowl and top with toasted coconut.

Serves 4-6.

Canned fruit can be substituted for fresh fruit. Be sure to use fruit canned in natural juices.
