Macadamia Nut Energy Bars

 

Ingredients

2 Tbs. Water

1 Tbs. Pure Honey

1 Tsp. Baking Soda

1/2 cup Butter, softened

3/4 cup Flour

3/4 cup White Sugar
1-1/2 cups Old Fashioned Oats, uncooked
1/2 cup Coconut Flakes
3/4 cup Macadamia Nuts, lightly chopped

Preheat oven to 325 degrees. Lightly grease 8x8" baking pan. In small saucepan, combine water, honey, and baking soda. Bring to a boil and stir in butter. Cool for 5 mins. While mixture is cooling, combine flour, oats, sugar, nuts and coconut in a mixing bowl. After cooling, stir mixture into flour mixture with a spoon. Spread into baking pan and bake 20 mins. or until top is nice light brown. Mixture will be soft to touch when you take it out of oven, but will set up when cool. Let cool in pan for 5 mins. and cut into bars. Transfer to cooling rack before serving.
