Breakfast Muffins

2 tbsp I Can't Believe It's Not Butter

6 slices Whole Grain Bread, crust removed
4 Eggs
2 oz Ham, thin sliced, low sodium, finely chopped
3 tsp Cheddar Cheese, shredded, low-fat
1 tsp Parsley, finely chopped

Preheat oven to 350 degrees. Line 6 muffin tins with paper liners. Evenly spread butter on each side of bread. Gently press bread into prepared muffin cups. Set aside. Beat eggs with whisk until frothy. Stir in remaining ingredients. Evenly fill bread cups with egg mix. Bake until egg centers are set, about 20 min.
